Crni Rižot (Black Risotto)
Dalmatian squid-ink risotto — cheap seafood, dramatic plate.

Ingredients
- 400g squid, cleaned and cut
- 2 sachets squid ink
- 300g risotto rice
- 1 onion, 2 garlic cloves
- 150ml white wine
- Fish stock, olive oil, parsley
Method

Soften onion and garlic in olive oil, add the squid and cook 5 minutes.

Stir in the rice, then the wine, and let it evaporate.

Add hot stock a ladle at a time for 18 minutes.

Stir in the ink for the last 5 minutes.

Finish with olive oil and parsley — no cheese.
